Caroline's Scones

Enjoy the smell of warm freshly baked scones when you are a guest at Rigney's Farm. 


Our scones are very popular with our visitors. 


Ingredients


  • 350g or 2 1/2 cups of self-raising flour

  • 60g or 1/4 cup of butter

  • 55g or 1/4 cup of sugar

  • 100g or 1/2 cup of cherries

  • 175g or 1 cup of vine fruits (raisins or sultanas)

  • 1 cup of milk

  • 2 eggs

 

Method


Mix all the dry ingredients, and add 2 eggs and enough milk to form a soft (not sticky) dough. 


Shape and bake in a moderate oven (180 C) for 20 minutes


Serve warm with butter and preserves.
